First place the escalope between two sheets of parchment paper and flatten with a flattener to make them thinner and larger. Place a slice of ham on the cutlet, making sure it covers the entire surface. Then place a slice of cheese on top of the ham. Roll up the escalope to form a roll, making sure to close the edges so that the filling doesn’t escape.
You can now use your IPLI cordon bleu machine by placing your roll in the center of the machine. Fold it over and press together with the palm of your hand to exert pressure, open your tool and your cordon bleu is now formed.
All that’s left to do is brush the cordon bleu with your marinade or seasoning, and sprinkle it with the desired breadcrumbs. We recommend baking in the oven for 20 minutes at 180°c.
