First, prepare your cutlet: lay it flat on your work surface and gently flatten it with a meat tenderizer to obtain an even surface. Place a slice of ham in the center of the cutlet, followed by a portion of cheese. Then close the cutlet like a paupiette, making sure the filling is well enclosed inside. Gently roll the paupiette in the breadcrumb or coating of your choice.
Now place your paupiette in the PAD, positioning it in the center of the device. Close the PAD and press firmly with the palm of your hand: the cutlet will take on the perfect cordon bleu shape—uniform and compact.
All that’s left is to brush your cordon bleu with your usual marinade or seasoning if desired, then cook it. We recommend baking at 180°C for 20 minutes for a golden and controlled result.
